Many proper frittatas are pan fried, broiled, etc. Go find one of them open_in_new if you want; this one is just slapped together and baked. Still delicious to my palate.
3-4 eggs
Mixed leafy greens
Oil: Olive oil, avocado oil, or your preference
Spices: Salt, pepper, cayenne
Anything else that sounds good to you: Garlic, shallots, cheese, herbs, cream, etc.
Baking dish
Tip: Pyrex
Oven
Spoon, fork, or other stirring utensil
Preheat the oven to 375°F.
Put some oil in the baking dish.
Add a generous amount of leafy greens.
Crack in the eggs.
Add more oil, then spices, and stir it all together thoroughly so that the eggs are scrambled and coat much of the leaves.
It if looks like too little egg, it may not be. They'll rise, and the thinner they are, the more crispy everything will get. Just go with your preference.
If adding a cheese you also want baked, sprinkle it over the top.
Bake for about 20-40 minutes.
I like the egg browned at the edges, and the leaves crispy.
Keep an eye on it.
Remove from the oven then let cool for 2-3 minutes.
Eat it.
